Our EA Help Guide shares this about the timer:
Once you unlink a platform account from your EA Account and link it to a new one, you can’t unlink it again for six months.
There isn't a way to bypass this that I know of. Support are correct, you'll need to wait for the timer to elapse.
However, I don't think unlinking the Steam account from that EA account will help you with this:
The problem is I need to remove it to add the correct Steam account,
Once you link an account of one type to an EA account, it creates a lifetime link. No other account of that type can be linked again in the lifetime of that EA account. As you've already linked a Steam account to that EA account, even if you remove it, another one can't be linked to that EA account afterwards as a result of the lifetime link.
Here's what is shares in the same EA Help guide about that:
When you link accounts, it creates a lifetime link to protect you from malicious activity and help prevent performance issues in your games.
You can unlink your platform accounts from your EA Account if you want to link them to a different EA Account, as long as that EA Account has never had the same account type linked to it before in its lifetime.
That means if you unlink an Xbox gamertag from your EA Account, you can’t link a different Xbox gamertag to it in the future.
