This has been a problem for months now. The weekend challenge is beatable, but extremely difficult even for H2H Champions with strong, well-trained lineups.
The key is not to sprint or dribble too much. Lure the AI out of the box, then pass it into your CAM for a finesse shot. Once you get the lead, just pass around the backline. It is boring, but it works. 4-2-3-1 with 2 CDM and 3 CAM works quite well for me.
