What to do with the remaining Easter Egg tokens? Will they be exchangeable for anything?

Knowing EA, they will end up going to waste
No - they were there to be able to compete the box, any you get beyond what is required is just fat built into the system so that one missed day doesn’t make claiming all the prizes impossible
