There was a feature request thread a few days ago, but it didn't get any attention. Here's what I posted, plus some new things:
- Accessibility: FOV options
- Accessibility: Color blind modes
- Accessibility: Option to auto-skip minigames (hacking, bypass, electronics, etc.)
- Bug fix: Right now, photo mode doesn't respect custom key binds for moving the camera. This is very awkward on AZERTY keyboards.
- Option to remove vignettes.
- DualShock support on PC, as well as an option for PlayStation button icons.
- More anti-aliasing options.
- Remove the 30fps framerate cap from reflections.
- Allow each game to be launched straight from the executable instead of requiring the launcher (which is just too slow).
- Allow separate keybinds for sprint and interact.
- Different keys/buttons for 'select dialog' and 'skip dialog'.
- ME1: An option to bulk sell items by spamming the interact key while in the 'sell' menu, as it was in the original ME1. Now you have to double click each item, which takes quite a bit longer.
- ME1: Allow the use of right mouse button to zoom out from galaxy map (as it was in the original).
- ME1: Get rid of dialog wheels where all the choices are the same. These could be auto-dialog, like in ME2 and ME3.
- ME1: An option to disable EAX on supported hardware. The effect is a bit too much in some areas. (The original had a "hardware audio" toggle which is absent here.)
- ME1: Remove the dialog option to not nominate a councilor, since that choice is not reflected in ME2.
- ME1: Add an option to disable the reflections.
- ME1: Make it possible to shoot enemies at point blank. (I assume this is a relic from when point blank defaulted to a melee attack.)
- ME1: Legacy bug fix: You shouldn't be in a relationship with Liara after explicitly denying her advances.
- ME1: The camera in the romance cutscene is a bit too low, revealing Liara's Barbie doll anatomy. Either move the character up to hide it (like the original), or update the character model to be more realistic.
- ME2: Fix a bug where you can't buy probes if you're clicking the button too quickly.
- ME2: Restore Kelly Chambers to her original character model.
- ME2: Restore the original prologue (with the Illusive Man and Miranda) that acknowledges the choice you made at the end of ME1. Now the default is the generic "no import + Genesis" cutscene, even if you import.
- ME2: Allow mouse wheel scrolling in all scrollable menus, not just some of them.
- ME2: Allow infinite sprint, like in ME3.
- ME2: Allow more mobility while sprinting, like in ME3.
- ME2: Add a separate mouse sensitivity setting for the planet scanner.
- ME2: Fix the audio bug after scanning with the Hammerhead.
- ME2: Make pre-rendered cutscenes skippable with the space bar, as it was originally. (Now it's just escape.)
- ME2: Fix bug where the Illium departure cinematic is not skippable.
- ME2+3: Fix the Conrad Verner import bug and remove a fourth wall breaking line from ME3 that addresses this bug.
- ME2+3: Add menu shortcuts (e.g. "U" to open the squad screen, "J" to open the journal).
- ME3: Make the dialog wheel the same color as in ME1 and ME2.
- ME3: Legacy bug fix - Monitors in Liara's room should face Shepard instead of turning based on your keyboard input.
- ME3: Add hotkey on the galaxy map for using mass relay so you don't have to move your mouse cursor while being chased by Reapers.
- ME3: Fix a bug where mouth animation is applied to Shepard's helmet.

I'd be happy if they squash a bunch of the bugs.
Tbh, as much as QoL stuff would be mint, I think game breaking, trophy not popping, game crashing bugs have to come first.

Fix the bug where you cannot shoot after using an ability/power for 1-2 seconds in ME1! (I'm hearing this is also an issue in ME2)

- 5 years ago@Fred_vdp you missed the most important bug to be fixed in ME2, all the crashes you get if you use a mouse with the quick bar, and you are using sentinel with tech armor or a teammate with ammo powers

Such as:
- Fix all the typos in subtitles. "it's" means "it is." "Its" just means "its." There's also one instance where Kai Leng is incorrectly spelled "Kai Lang" (in a conversation with Kaidan).
- ME3: There's some funky shading going on around Miranda's eyelids in the Horizon mission.
- ME3: Dialog cut-offs in fetch quests.
- ME2 + ME3: Reflections on the Normandy don't look right. I understand they're not real reflections, but they don't resemble the surroundings at all and follow the player in an unnatural way.
- ME3: The game has a few instances of neutral dialog choices, but they are inexplicably placed on the 'left side of the dialog wheel. The result is that the player thinks they're investigating, but instead the conversation ends. Example: When talking to the final boss on Rannoch after defeating it.
- ME3 could use some margins around the subtitles. They sometimes hit the side of the display, which isn't very pretty.
- ME3: Sometimes, after a transition to a mission, you get a brief shot of Shepard standing gun drawn in the shuttle or similar location.
- Some sidequest markers on the Citadel are missing from the map (e.g. Ereba).
- Wrex' voice filter is very inconsistent throughout the trilogy.
- Characters reference events that didn't happen, e.g. Joker says I used to hang up on the Council when I never did that.
- Shepard making uncharacteristic statements. For instance, in Mass Effect 1, Ashley says she believes her deceased father is still watching her. Shepard can ask "He's not a zombie, is he?" This mockery of the concept of the afterlife is not respected in ME3, where I count at least 3 instances where Shepard expresses a belief in the afterlife despite this not being clear from the dialog wheel or interrupt action. Can't do anything about the interrupts, but at least the choices on the dialog wheel can be rewritten.
Edit: Also one spoiler that needs to be addressed:
SpoilerThe splash screen on ME2 shows the squad, including Legion. This is a huge spoiler for new players. Even Garrus was supposed to be a surprise.
