I really don't have any advice on this. We'll keep an eye out for other reports.

There is nowhere in the text where I compare playing and sim, 

The only question is why the results are always so incredibly different in sim?

and why is the same game I PLAY so incredibly different…. like I said I’m not  good but if I play the same game 3 times and I can barely do anything in one game but totally dominate the next?

It got this boring/bad after adding ICE-Q or AI or whatever you call it, Before if your team lost 14 games in a row when you sim, and you turned off the console without saving, it was basically the same result the next time you played (sim), some small changes but now it's just nonsense 14 loses changes to 11 wins, 🤷‍♂️

I agree with that. But one thing that is obvious is. The abilities of the AI team. Its like they all have elite edge work, even though the  card doesnt have it. The stick work in puck handling also seems to be above the said cards abilities. The AI players almost seem to have a 6th sense when avoiding being hit.  Just to highlight a few.

Taking into account to adjust the sliders to be more competitive. Is it not reason to think, that before that adjustment, the AI was playing at a level above yours. Not saying anything about the game being tilted or determines the winner. Rather. It has levels it plays at. As indicated by the levels. The AI wont play the same way at rookie, as it does Superstar. So. There is alteration. However, the alteration is to keep competitiveness sound. You can only control 1 player at a time, while the AI controls the other 11. The problem with that is. The AI doesnt utilize your players as it does its own. And this maybe why games seem to be unbalanced.

Glitches are going to happen. Obviously, the puck warping is unintended. This is not something that is "pre-determined".

Just a quick warning. If the talk of pre-determined outcomes continues, this thread will be locked for breaking our rule on discussing ice-tilt.

That isn't fully the case seeing you are basing some aspects off the AI and the animation based actions. 

While I do feel some of that is correct some of it is pre determined.

Who wins is determined by who makes better reads, applies better positioning, and executes more consistently over the course of the game. The engine does not choose a winner in advance; it resolves every play as it happens, and the scoreboard reflects the cumulative result.

Then what is the formula that determines/factors in to who wins or loses? Technically, the computer is choosing who wins or loses.

I have years of experience of having to cater my sliders to make it feel proper or somewhat even. 

There is no point or reason to complain about this seeing nothing will be done, and we have come to terms with it. 

 Most of us have had to adjust to how the game "works" within a SIM or in game, which is a yearly struggle. 

I have watched content creators who do solo franchise modes where there is a difference to the SIM model when you compare simming from the calender to the action tracker. Teams will "play" different either for the good or bad. (this has also been a thing for a while).

How often do you play offline?

Never. I went with what sounded logical. Especially when we don't get other reports of winning more games when simming. I don't think it's out of the realm of possibility that when someone makes this claim, you need to take their skill into account. I'd be curious to see if others have the same issue ehere they win more by simming rather than playing on Pro difficulty.
