I think this is part of 11.6.1 update, Penny's Pursuit Zomboss fight refreshes every 10 hours now instead of every 12 hours. Technically it is a good thing, more plays, more seed packet harvesting. Refreshing time may not always be convenient, though.
It has been at 8am/8pm est everyday for me since the update
