I’m in a pretty good place, farming MHF reqs, and thinking about Leia or Jabba because of they’ve aged well and need strong teams to beat
That is good to know. To be honest, I am just now working on Resistance characters since there was the free Lightspeed Token... and, in my mind, it makes no sense to have a teamless character. I will certainly follow your suggestion... right after I get Baylan. (I am SO close to unlocking his event!) Thank you, harvestmouse1!

Many Mums is never a bad suggestion. It's a devastating team that is useful for the very best players. Also, the hop, step and a skoll to Baylan is another good point.

Yes to Rey (you need her for...Rey) but no to that exact team. I heard there was a quirky JTR counter to GL Rey, but I haven't used or seen it. However as for you team, I don't think they'd cut it in Aurodium. You can make a better team though without a Legendary; Finn lead, handbag bros, Zorri and probably Rose. Be aware, this team is very speed reliant.

All Kyber players are being squished down. At the moment, we're all swimming against a river that's getting faster and faster. Everybody will be washed away until CG does a "Ooops yeah my bad, sorry about saying everything is WAI, you're right it isn't!" Until that happens, I'm afraid that there's little to no chance of progressing.

Hmmm, OK that's an interesting one. Gungans are a good defensive team. However, in Kyber there are set counters that are very reliable. Also, it's been a bit weird recently with datacrons that have been literally by-passing the silver ball of annoyance.
If we get into a state where the ball is no longer by-passed and you can make players use the counters before hitting your gungans, then OK. Other than that, it might be a better offensive team. Saying that, I generally set them on defence unless I know I can utilise them on attack. Sssshhh though, that's our secret.
So if "I want a good defensive team to combat what's coming out of the Kyber waste pipes" maybe Gungans isn't the right choice. Without a good current datacron, they'll probably have an answer for them. For the general Aurodium level player...then maybe that's a real toothache for them.
I am probably the least qualified to speak here, but I do have suggestions. Namely, I have one attack team and one defense team that I would recommend. The Great Mothers (Leader Slot), Morgan Elsbeth, Nightsister Acolyte, Death Trooper (Peridea), and the Night Trooper make for a really strong attacking team... also, the first two characters are required for Baylan Skoll's Journey Quest. The defense team is one I haven't used, but dislike going against. It requires Rey (Jedi Training) as the Leader and 4 Resistance characters. I often see Finn and Poe in the team... usually eith C-3PO. The last swaps out. However, I legitimately have no clue how they compare to the Gungan team since I have neither.

Meanwhile for me the question would be how much more quickly would you get a GL?
Because you said below you need more defensive teams, and Gungans work well there (also they're excellent in Territory Battle/RotE if you pick the right battles - you prob don't need more teams for that generally, but having an extra squad can make you more useful to your guild since you're able to donate more toons without sacrificing combat mission points), the crux of the issue is whether you could cut the time to a GL by 2 months or more.
If you could, the boosting the GL farm is probably better. If not, I would likely go Gungans for immediate impact based on what (little) I know.
Keeping in mind HarvestMouse's wise comments on mods not belonging to characters, but to you. You probably have lots of "good potential" mods that haven't been sliced up sitting on low-value toons.
Most of those will not pan out, but a 5-dot +10 speed Blue speed set mod can also hit +18-22 speed without too much investment (say to 6-dot green, AKA 6-D), allowing you to steal it for someone more valuable, returning something just as good, but with less potential (say, a 5-dot +10 speed Gold mod that has 2 fewer chances to hit speed).
I don't know what your resources look like, but I have tons of mats for taking up 5-dot mods now that slicing mats are available with raid currency.
Not only that, but Gungans get their bonus turns, so speed isn't even that important to them. Health is arguably their best stat, with Potency and Offense also playing good roles depending on the toon. Since we get force fed health mods, it's likely you can cobble together a good set.
I'd help more if I had your *.gg and if I knew what GL you were thinking about and could compare that to how far along you would be.

Spectre is a team that surprised me. I love GLAT and her crazy offensive defense
I used mine on pirates and now own PKHO and am enjoying his crazy laugh every turn.
I would say, look at the Mando/Grogu requirements and get as many of his requirements as you can. You know he’s a raid toon and most likely going to dominate many game modes once CG decides Conquest Leia is no longer a thing.

This can never be a reason. Mod farming is an eternally, perpetual thing. Tomorrow, you will need better mods than you have today. Yesterday, you had worse mods than today. Also, some characters could be sitting in your roster smugly looking at their mod-set. However, it's your mod-set not theirs! If Gungans need the mods more, then give and take how you please!

It's difficult to know, especially when we don't know your priorities. Also, I'm unsure a lot of the 'path experts' are real experts. It's a good idea to plan your moves, but these exact paths...too many variables, for me.

Well that's the crux of the argument there. A team that's instantly going to give your account a boost vs something better for your account in the long run. Will adding Gungans boost your GAC so that the crystals you earn offset ignoring the larger (GL) target? I don't think there's an answer.
A few things to consider though:
So, I think only you should make the choice. Neither choice is wrong, but one choice will be more right than the other. Maybe, if you plan what you want to do for the next couple of farms after this one, the choice might become a bit more obvious.
Both sound good.
Getting an entire team with the LSTs will arguably help most in the short term, the latter long term. Win Win whichever you choose.
