You even said it yourself, Wedge was once part of the Empire, do you see him having the Empire tag in the game? The tag that is used for the character is the latest they have in canon.
Latest point in canon? Not always... tell that to Rex and TPM Maul or Barriss etc... I can go on... it doesnt have to be their latest iteration...
And for most of Rebels post Season 2 (As Fulcrum) he was a good guy, and part of the Empire and a Rebel
That's the Clone Wars version of Rex. Not his current. That's why we have Clone Wars Chewbacca who isn't a Rebel. It's always to latest iteration. If it's not then they specify the name of the character. So it could be Agent Kallus(Empire) and he will have the Dark Side, Empire, Role tags. OR it could be Agent Kallus Fulcrum and he will have the Light Side, Rebel, Role tags. There is literally no character in the game that has mixed Dark/Light side tags, even though there are quite a few characters who transitioned from one to the other.
As Fulcrum hes still part of the Empire. So Light Side, Rebel, Empire - as in my original post. Its not a difficult concept to grasp. Whilst he was a Rebel and a good guy (Light Side) as Fulcrum he was still an Official Imperial hence the Empire tag. Its pretty straightforward. A Rebel in Imperial ranks.
