I went through every character and did the find button for each of their shards, and I got these locations:
8a LS: Boba Fett (Possible buff?)
8b LS: HRScout
8c LS: Snowtrooper
8d LS: Stormtrooper
9A LS: FO Stormtrooper
8a DS: Bariss
8b DS: Ewok Scout
8d DS: Ewok Elder
9A DS: Ewok Scout
That is all I have, and I might have missed some. I didn't find anything about the cantina nodes.
Edit: Stun Cuffs will be in 8G (N) LS, 8D (H) LS, and 8B (H) DS. Stun guns will be in 8A (H) DS, and 8B (N) DS. Thermal Dets will be in 9D (H) DS, 8F (Nl) DS, and 8C (H) DS.
