Why?  I seriously don’t need the Kenner line up of variants of the same character in different clothes or holding a different weapon.  There are literally thousands of side toons to add, like Tallie or Bib Fortuna.  Hell, add Scorpio or Lana Beniko. 

Galactic Legends have three requirements: 

1. There can only be one version of each character, Anakin is already a GL 
2. That version of the character needs to be when they’re at their most powerful, in Anakin’s case being the version from the end of Revenge of the Sith
3. The character has to be iconic and recognizable enough to be called a Legend, which yes, is covered with your suggestion, but you would still be missing two out of three of these requirements

The game has managed ten years without, so he clearly doesn't NEED to be added. Whether you might like him, and whether others might, are different issues.

Multiple GL versions of the same toon would be absurd though.
