My team was equally bad (still is), it wasn't a fun experience aside from the joy of finally clearing it.
I can see how my previous comment can come across snarky, but what i meant was that even if you use the right strategy you're still going to need a lot of retries. Somehow i thought that was comforting to know that you're not necessarily doing something wrong, in hindsight maybe it wasn't, haha.

I got really close with both Droidekas with only a sliver of red health left. Took one of em out and GG wipes out my whole team. :o

I did the same strategy in his vid and got it on my first try. My team looks exactly like yours (only Ahsoka and GK are relic'd).
Looking at the speed you posted above, you're not setting your toons up to do that strategy. Your attack order is off a bit. But if you re-mod a little you should be able to get it easily.
His speed order was: Padme 284, Shaak 274, GK 271, C3P0 256, Ashoka 122 (122 Ashoka??? And people here saying i need mine 270+ ?)
My current speed order now (as I keep moving mods every so many tries) is: Padme 301, Shaak 253, Threepio 244, GK 243, Ashoka Tano 220.
You AT might be too fast relatively. She gains +25 speed, and +50 with crit immunity. She shouldn't start with crit immunity, but she would still be faster than your GK with is different than the recommended turn order from above.
