In Legends, they bent over backwards to build that bridge after Episode 2 nuked Boba's backstory and turn Jango and Boba back into Mandalorians.

Disney canon has not done that, and the most definitive answer we have is the Mandos' evil vizier insisting that Jango is not a Mandalorian and stole that armor.
