The issue is really that there are so many anti-jedi characters, i.e. people who deal specifically more damage to jedi. When you know that taking a jedi into a battle against Dooku means that your jedi won't be involved in the first round (possibly no rounds at all, given that his basic stuns jedis reliably as well), then there's no point carrying any jedi.
