You can beat GW without Phoenix and you can beat it with a single team if you have the right team. Phoenix is simply the easiest path for a newbie to take (and it is also required for some useful content later).
You need three things for GW - healing (preferably passive, crowd control (offensive & defensive) and good damage output.
