Ever since the new update whenever it tells me that I have earnt Canderous Ordo shards I will go to check how much I have and it will remain at 26/30. I have done it multiple times to no effect.

You last earned Canderous Ordo shards from Cantina Battle 5-C yesterday (which was after the update) to bring you up to your current total of 26. Since then, you have simmed the battle 5 times and have no received any Canderous Ordo shards.
This is possible as the shard drops are not guaranteed.
You do not appear to be missing any Canderous Ordo shards.
