jimmysna, I will need to take both sides of this in all fairness...
While I agree some players who live with disabilities would want to play without them being included in the game to forget their problems; that can be said with most of us who face hardships in one form or another.
When it comes for those who do live with disabilities... yes, most certainly they can find themselves at various times of their lives wishing they had a more "healthier" or "normal" existence among us. In fact, many over the course of time have faced numerous trials, adversities, and heartache as a result. But what inspires me as it does with others too, is having learned of so many who have risen above these adversities. Many of such beloved souls have come to be very successful and some... even prominent members of society... giving us all cause to celebrate and encourage the rest of us to keep going and trying no matter how challenging it can get. As such, it is those who are continuing or have learned to deal with such adverse ways of doing and being who find they prefer to see these in the game. To represent their sides of the story.
In this too... I think it would be an excellent way for those who live in perhaps "better health" to explore the everyday difficulties others face. Though it may not come close to all that is faced in real life, it may just be enough to perhaps create more awareness and too... some much needed changes within ourselves as to how we each see and relate to one another who do have to deal with this every day of their lives.
So, with this, if it were to be added as a base-game add-on (preferably) or if it had to be another DL, it could be set up to for each player to decide to either include or opt out of this experience in the game, as we have seen already with some other options. This way, all players have a choice... allowing this experience to be fair and considerate of all players.
