I love your ideas, I also would like to be able to rent out my vacation home to other sims, and hire a cleaning company, or have my sim take care of maintenance. Hotels and cruise ships are also high on my wish list. I think it would be nice to own and run a hotel as well as vacationing in one.
The real estate business sounds intriguing and I think it would be a lot of fun. I would like my sim to be able to hire their own employees also and be able to stage houses to sell.
If buying a bar, nightclub or cafe, etc I think it would be nice to have the option for sims to run that business or hire a management team to do so. If they end up owning the town they will definately need a management team to help run the businesses. I could just imagine all the chaos.

I don't think it makes sense that you can join the culinary career and (if dine out is installed) own a restaurant. However, if you choose the bartender branch, you can't own a bar. You should also be able to own a spa, tend espresso bars for money if you own the cafe (so you don't have to hire a barista), and own a gym. That way, if you have certain jobs, you can get addition benefits from owning the career venue type. For instance, if you are in the athlete career and you own a gym, you can earn extra income from collecting "membership fees" from NPCs.
