Just watching horses jumping and barrel racing?
I just got Horse Ranch so I'm not sure but was wondering if you can actually barrel race and jump while mounted on a horse or can only direct them to do so solo/while watching?

you can do it while mounted as well.
As stated already, your Sim can do so while mounted on the horse. I do believe your Sim has to have a certain level of the Riding Horse Skill. And when ready, you can have the horse/rider compete.
