Plants randomly reverting to past growth stages

I'm curious as to why my plants will randomly go from Mature growth stage to Planted or Sprouting. It's not a new season, I've done nothing to the plants themselves. But at random times, when the plants are supposed to produce fruit in the mornings, they suddenly revert completely to previous growth stages. For no discernible reason. And then they have to go through the growth process all over again, even though they are mature and high quality. It makes no sense and I'm wondering how to fix this.
