Retail lots with bars etc?
I'm just wondering how retail lots work. Never visited them before. Just placed 3 new lots as retail. They all got bars. How come only one lot spawns a bartender and the other 2 don't?

I'm not sure what retail lots you have, but do you have Get to Work? With that pack I've occasionally added a bar or cafe to a retail lot, but to my understanding the only use it is to us is for our sim to make free drinks (which you can at least drag to sell, to hire a barista or bartender for - also, you make no profits). Or can leave as an unpurchased/not owned lot and the game will populate the bar with a bartender when you visit it.
I do that more often with my Dine Out (owned) restaurants. If I add a bar to a restaurant my sim &/or a waitress make free drinks. However, if the game owns the lot it will populate the bar with a bartender.
Now there is at least one consolation. If you own a restaurant you can add the drinks to the menu and folks can order them and pay with their meal.
So... your restaurant may not be spawning a bartender if it's owned by you, not the game, but your restaurant owned by a sim may not be generating a bartender without you clicking on the bar and saying to hire a bartender. (You pay for the hire also, and it's only for one shift).

Got all packs. And it's just like I said. 3 retail lots, all got bars but only 1 lot spawn a bartender. Really weird.@SisterGloomy I apologize for being unclear. Basically what I was trying to convey is that if you own the appropriate packs that allow you to have a sim purchase a restaurant or a retail lot, I've found that if you add a restaurant or store with a bar, or the game already has a restaurant or store with a bar, the game will add a bartender to the bar (at least usually) when the lot's visited by other sims (from a different household that does not own the business).
So... If your sim (Sim A) purchases a restaurant or store with a bar, and that sim opens the business, the game will not automatically spawn a bartender:
(Sim A/owner options when store is open) :But... if you go to another sim household (Sim B) and visit the lot that the first sim owns (Sim A), but you don't currently have Sim A running their store that day (because you're playing Sim B) ... If Sim B goes to the store you may find that the game has opened the store and has spawned a bartender for the bar (you may have to stay there for a bit to see the bartender appear :
I was wondering if that was the difference between the retail lots you mentioned - if some were owned by your sim and some were not.- @SheriGR I just put them down, no sim owns the stores.
