So you created a Sim that you wanted not to slim down but when you saw your Sim start to workout a lot you did not remove the workout equipment. And you probably didn't give her the lazy and glutton traits. You shouldn't have given her the Active trait instead?
So to sum it up the game did not do this to you, you just made some poor choices. If you correct the game in the way I described you should soon see your Sim gaining weight.
Actually, she's a mermaid so every time she swims she works out. I didn't have any workout equipment, neither did I give her the Active trait.
I'll keep the lazy and glutton trait in mind for the next one. Maybe this time I won't make a mermaid either.
