Perhaps he was so close to death (destruction?) he had to go into a deep hibernation to recover.
Perhaps he had a human thrall that he trusted and it was the thrall that recovered what was left of his body and put it in a crypt until he was whole again. The thrall would be long dead, of course, but perhaps he or she made some arrangements for when the vampire came back.
You can have your vampire look human, but you can also create their dark form to look less human for when the thirst is on them.
