Is there a cheat to disable the ailments system, or at least to remove an ailment from my Sim?

Don't know unfortunately. But this cheat should make them immune to ailments unless caused by imbalance or fairies:

traits.equip_trait trait_HolisticHealer

In gameplay, you obtain it through Naturopath career in Apothe-curist branch.
