Well, the last question about not being able to bill the owner I think was just a game glitch. It only happened on that third game day and never since.
Also, it's a shame you can't set the work hours for your employees. It's also a shame you can't actually tell them what to do. For instance, when there are eight vomits on the floor, it would be super helpful to actually be able to tell the guy I hired specifically just to clean to, you know, clean! And it's not like he's a bad employee; it's just the shallow AI gets stuck sometimes like it does in other areas of the game.
