It matters. The final plant will have the same exact seasonal (and growth) statistics of the one you graft ONTO. So you take the cutting from the one you don't want, and graft it onto the one you do. If you graft sage onto apple, you get a tree that only grows in fall. If you graft apple onto sage, you get a bush which grows year round.
