Stormchaser is probably the one I buy for every single sim I play as I find it ridiculous that adult sims are terrified of some thunder. Right now I'm playing with a large extended family so Always Welcome is useful as it makes it possible to spend holidays at different households in the family (Winterfest at grandmas doesn't really work if you can't cook). I don't add this too all my sims, but to the one who is currently "head of family".
For the rest I try to choose the ones that makes sense for the sim itself. A painter might get the Creative visionary after years of working, someone who wants to become an athlete get the gym rat and someone who has lived with limited means become frugal. I had a gardener who I made waterproof and gave Super Green Thumb as that made perfect sense for her career.
I never ever touch on the ones that take away their basic needs such as eating, sleeping or taking a shower. I did add the Seldom sleepy to one sim who had three toddlers and two kids though.
