I didn't read all of this thread but there is an issue with the position of the host stand in Chez Sul Sul made by Maxis. There's a brick wall surrounding it and if you don't remove that or move the host stand somewhere else the host/hostess will not come in the building. They'll stand outside, guests will arrive and not be seated. I also tend to have an issue with at least one table not getting served every shift. It's not the same table either, but I might have narrowed that down to not having the coffee machine or ice cream maker. Haven't tested it yet as I have to work soon.
