I love these questions! <3
A1: Crosspack sounds awesome! I'm excited about club rules and yard sale tables. I also love other simmers' ideas about pets and toddlers being able to play with yarn and bother a sim that is knitting, knitted items possibly shrinking/being ruined in washing machine and needing to be hand washed to avoid it and new club icons for Get Together to mention a few.
I'd also like to suggest Kids Room Stuff and that sims should be able to knit voidcritter toys/decor. There could be a couple of voidcritter swatches for, for exmaple, 38, 40, 44 and 45. How cute would it be if a grandparent could knit a voidcritter toy for their grandchild that is crazy over the critters, or just voidcritter fans knitting them together
A2: I would prefer crocheting animation, but if it can't be done it's okay. Crocheting is cool and it would be cool to be able to craft crocheting items as well.
A3: I hope knitting is not restricted to a desk. My sims want to knit anywhere. I'm not actually that excited about the desk, though it is pretty.
A4: I would love knitting to take some time, so that sims don't produce knitted items too quickly. I'm not a very fast knitter, so when I knitted a beanie it took me a day or two I think, even though I knitted rather intensively. If I knitted something harder it would require even more time.
A5: Standing is perfectly fine if they can't find a place to sit! I actually think it would look cute. Perhaps it could be harder/slower though, or uncomfortable after some time, especially for newbie knitters.
A6: I remember that when I couldn't knit something or made a mistake I would run to my mom and ask her to fix it for me. Something like that might be fun in the game as well  Maybe those sims that are just starting to learn to knit could make mistakes with their knitting and then there would be possibility to ask mentor to help. Newbie knitters could also try to fix it by themselves, but it could impact on the quality of the item.
A10: Not autonomous, please. I rather decide the sims who knit :)

Here are some knitted pokemons to represent what knitted voidcritters could look like https://i.imgur.com/HApHrLG.png
