Welcome to the forums, @SimGuruConor :) Here's my feedback.
Discover University: The Knitting skill added as a factor for the Fine Arts major. From tasks, assignments and studying the skill. | Reference
Laundry Day: Knittable sweaters shrink over time.
Parenthood: Knitting increases the Emotional Control factor for teens.
As for fame, I am not sure about becoming famous for knitting. It definitely would be awesome to see knittable items be sold in the markets of San Myshuno, club activities for Get Together and opening up a retail shop with knitted items.
I do not want anything related to the broken emotions system, please.
The only thing I could think of would be that it's a place for storing knit-related items. Possibly drawing up some designs and stuff like the Drafting Table from The Sims 3: Ambitions. Not sure.
I am not a knitting expert nor a knitter, so I am not the best person to answer this question. I'll skip this.
I don't mind them standing up while knitting, but I don't want them to have some sort of bug at the end of the day where they would prioritize in standing up while knitting over sitting. Please fix the routing issues in this game. :)
Never experienced, but I'd like to see it in-game fleshed out nicely. More gameplay = better DLC.

1. This should be reserved for level 10 Knitters only.
2. This interaction should happen autonomously but not too often.
3. This interaction can be rejected if the Sim being asked is in a bad mood.
4. This interaction can be declined if the Sim being asked isn't in a good enough relationship.
5. This interaction has the chance of being denied if the Sim being asked has the traits Erratic, Snob, Childish, Lazy, Non-Committal and Mean.
