Well, that's exactly how it worked in TS2. I don't remember if your initial alignment reflected that of the witch who turned you, or if you always started out as neutral, but after that it was entirely up to you. Studying and practising light magic => good witch; studying and practising dark magic => evil witch. Every spell you cast would give you magic points of the corresponding alignment and make you more good or more bad.
which actually works far better storywise, than just forcing the player to pick a side.
