I don't think I could ever play without all of the packs turned on, but I can see the appeal of focusing on certain features. I'm very glad you mentioned Get Together, because surprisingly I hadn't thought about using the club feature with my fairies yet, and that will definitely be essential.
I guess if I were limiting packs, the ones I chose here would depend on which features of EBN interested me most: fairies, natural living, or both. If natural living, Eco Living would also be essential. I've been playing a lot this past week with a household I created when Growing Together was released: a freegan with an infant. This pack is made for her! But if you were mostly focused on fairies, I probably wouldn't bother with Eco Living.
Personally, I would definitely keep Seasons, because I like having a few challenges with gardening, as it's too overpowered otherwise, especially now with fairy dust and gnomes. Also, I am an avid gardener in real life, and it wouldn't seem realistic to me without lots of frustrations! 😂
