I made the exact same mistake the first time I had a sim in university. Now the only sims who have a full schedule are vampires, with sunlight protection. For all other sims, I find that only allowing my sim to do just 3 separate things for University, is the comfort zone for my play style.
Any more than that drives me a bit bonkers, and the most I can handle are playing two sims at the same time, any more than that I forget to send sims off to class, or do their homework.
