Put the wedding cake in the personal inventory of either the bride or groom (obviously a Sim you are controlling). Don't necessarily put it out before the wedding. I've had the cake stolen on more than one occasion. Not entirely certain it was due to the fact my Sim is a Global Superstar, or not. Make certain that the table set aside for it is a flat table, as opposed to the ones with the nice riser in the center, else the interaction to cut the cake won't work (Learned this the hard way.)
It might be a good idea to turn off autonomy. As for getting them to dance, that's a tough one. I did have success, once, when I had the couple practice the slow dance prior to the wedding. No guarantees, however. Take it nice and slow and don't put too much emphasis on the perfect wedding. Keep your sense of humor. Seldom in RL is any wedding perfect. Roll with the nonsense and have fun.
