EMPLOYEES

You can have 4 workers in your Small Business at any one time. One will be the Owner, and the other 3 Employees. In the Manage Employees Tasks panel They are shown with their picture, name, top 3 skills and assigned tasks. The Owner Sim has a Small Businesses icon on their picture.

You can hire anyone you have met (including family/household members/occults etc) as long as you don't have a red bar (negative relationship). This panel shows all the known Sims you can pick from, with their pictures, names, top 3 skills and relationship level to your Owner Sim. You can also hire Employees via a social interaction on Sims themselves, which doesn't give you any info before-hand, but you might like to be surprised or have the chance of needing to fire someone so it has it's uses too.

EMPLOYEE TASKS
Owner/Employees can be set up to 5 Employee Tasks. This will direct their autonomy whilst at work in your Small Business.

Food and Drink - All things Grilled Cheese, Bake, Cook, Grill, Make Treats, Mix Bar Drinks. Tend Bar, Tend Coffee/Tea Bars and Counters. (Missing: Tend Cafeteria, Tend Market Stall)
Art and Music - Acting Routines, DJ, Do Comedy, Paint, Play An Instrument, Play Guitar, Play Piano, Play Pipe Organ, Play Violin, Sing, Tend Tattoo Table. (Missing: Various crafts, so you can't always have staff make stuff for you)
Hobbies - Build Robots, Do Tarot Readings, Give Massages, Offer Paid Mentoring, Cheerlead, Debate, Program, Rocket Science!, Run Lectures and Classes, Use Cauldron, Use Microscope, Use Science Objects, Use Telescope.
Mischief and Mayhem - Cast Helpful Spells, Drink Plasma, Hack, Possess Objects, Prank, Roar.
Outdoor - Care for Animals, Care for Livestock, Care for Pets, Care for Ranch Animals, Play with Pets, Tend Garden, Tend and Harvest Garden.
Social - Be Friendly, Be Funny, Be Mean, Be Mischievous, Be Romantic, Care for Little Ones, Fight, Scare. (Missing: WooHoo, Sparring/Practice Fighting)
Home Activities - Clean, Fix Objects, Scrap Crafts.


SMALL BUSINESS JOBS VS. CAREERS
Sims can have both regular careers and Owner/Employee positions in a Small Businesses. (Note: Small Businesses close automatically if the Owner Travels or goes to work elsewhere. If you open your Small Business your Employees will show up at your Small Business lot - if you do this while they are working elsewhere it could damage their Performance in that other job.)
