Strategies for when your employees die

Hi guys!

Well, inevitably the time eventually came .. I showed up to open my restaurant a beautiful sunday afternoon, only to be greeted with the message that almost all of my employees had died! I took some time to mourn them, and when the two seconds I devoted had passed, I started to think about how to solve this problem. I thought I would share my thinking so that you could come with suggestions as well!

The restaurant in question is a 5-star fine dining restaurant, with highly skilled employees. When they passed I had to hire new ones, but none of the ones I could choose from had hardly any skill. This is a critical problem in regards to chefs because you need highly skilled chefs to serve 5/5 dishes, so when they die and you have to employ the unskilled new ones, you have to change your menu, and your rating may possibly go down. Also - you definitely won't make as much money!

Having this in mind, I thought that maybe it would be best to circulate my chefs so that there was always a young one in training, and then my restaurant would not suffer when the best one(s) died because someone would be ready to take over. But with this strategy, there would always be a long period where I wouldn't be able to serve the 5/5 dishes that I wanted on my menu, because there would be one chef that wasn't skilled enough.

Perhaps if we could decide ourselves what quality foods our chefs made?
Or even better - if the game allowed already skilled sims to be hired when one skilled employee died?

After reading my reasoning, what do you guys do to deal with this problem? Or do you have any ideas for the best strategies?
