I found that most of those mushrooms, with the exception of the verdant mushroom, only pop out during winter. I thought for a long time that my game was glitched because I couldn't find any mushrooms. Fact was, they mostly spawn during winter...definitely not during spring and summer which I think is a little weird, but hey, this is EA. :D
