Wooooo I figured out how to hire my own sims as staff in the restaurants (no mods)

Thank you SO MUCH for this tutorial. I did it a little differently. I put the sims in a lot in a different world than my restaurant, then evicted them and they started showing up after I deleted some NPCs.
I actually went in a raised up the sims skills so they'd be better employees.
My question is how do you just leave them evicted? Where did they go?
Might be a dumb question?
