Mod issues

@matteafn  Do you want to only move the Mods folder, or the entire Electronic Arts folder?  Either way, let's try using the full file path for the symlink rather than the ~ shortcut.  Find the new Mods folder the game created, right-click it, select Get Info, and find its exact file path under Where.  That's the file path you'll use instead of just writing ~/Documents.  For example, the full command might look like this:

ln -s /Volumes/SIMS/Electronic\ Arts /Users/matteafarfan-narcisse/iCloud\ Drive/Documents

Double-check the file paths to both folders you're using, and if the symlink doesn't work, please post those full file paths so we can take a look.

I do want to mention that the alternative here is to dispense with the current setup, that is having no local Documents folder and everything Documents-related automatically stored in your iCloud Drive.  We can help reverse that setup too, if that's what you prefer.  It might be easier too, but that's irrelevant if you want to keep the current setup for other reasons.
