@Techn0Viking This has been reported as a game bug. Head over to https://answers.ea.com/t5/Bug-Reports/NEEDS-SAVES-Plants-reverting-to-dirt-pile-Patch-1-76-81/td-p/10475991/ . Please do feel free to add your own detailed report there! The thread has some suggestions of fixes. If you're not on console and are open to mods, there's at least one to help prevent this issue - I believe from Littlmssam.
