On Xbox, you can access the settings by pressing the Menu button (Start). From there, you can go to Game Options, and the option to adjust the screen is here:

This is in the centre of the screen so you should be able to get to that option, but in case it's not the case, please, could you take a photo of how the game looks in your monitors and share it with us as an answer to this post? Also, could you let us know which monitor/TV model you are using so we can investigate it? In the meantime, try to restart the game and press Menu button (Start) > get into Game Options > Go down > Go left > Press A > Go Righ > Go right > Press A. This should get you to the screen adjusting option.

@foresthag - changing the display area settings on PS4 should change the size of the game screen. If this is not happening for you, could you take a photo of how the game looks in your monitors and share it with us, including in your answer the model of the monitor/TV you are using?
