Ok so I tried transferring my game from one external hard drive to another external hard drive and it didn’t work. I also can’t plug in both at the same time so it’s pretty much impossible to do a symlink with no electronic arts folder or anything in the computer since it’s stored in the currently used drive.
When you say "I tried transferring my game" what are you referring to? The game installation or your Electronic Arts > The Sims 4 folder?

The point of the symlink in this situation is to NOT have the Electronic Arts folder on the computer. A symlink (symbolic link) is a soft link created to the actual data stored elsewhere. The Electronic Arts folder is moved to the external and you create a symlink in the Documents folder to it. The symlink only works if the external drive is plugged in, otherwise there is no Electronic Arts folder and the symlink is broken.
