@abookwyrm87 You could look on onedrive.com, either in My Files or the Recycle Bin. Just because you deleted your local copies doesn't mean the files were necessarily removed from cloud storage as well.
Other than that, no, there's no way to get back the data yourself. It's not tied to a particular save, as you've seen, only the UserSettings.ini file. But there's a workaround that involves editing your copy of the file, if you're interested. I'd rather not get into it here, but it should be easy to find instructions elsewhere.

@Arkenon4 If you open Edge and type in onedrive.com , you should already be signed in (if your computer is linked to your Microsoft account) and be able to look for any missing files.
If you're asking how to edit your own copy of the file to unlock the login rewards, that's not something that can be discussed on this site, but the information is definitely out there.
