So when the Premade sims die, randomly generated ones will take their place. Am I Correct?

Yes, there is a certain population level (I'm not sure what it is) that the game will attempt to keep, so as sims die they get replaced with randomly generated ones. You can also add your own sims or sims downloaded from the gallery to the population. There will also be a certain population of "homeless" sims, eg. the maid, who you won't see as a playable household option in map view. You can see the playable and the homeless households via Manage Households (I think that's what it's called).
