More options for creating rallies/championships in quick play mode

Add additional options for the random creation of rallies and championships in quick play, as the creator is too random at the moment and having more control would be great.  Suggested options: - Ch...

@SharkyOB And make the stage selections random. I play 3 stage rallies until the AI times get fixed and I've noticed I always get the same 3 stages in the same order when playing a specific rally.
