Do your sims have custom tattoos by any chance? It is probably related to this bug:
Sims turn completely Black after Customization
You can get their skins back to normal if you remove custom tattoos. I did that with a couple of my sims. I'm going to give them their tattoos back once this is fixed. Hopefully it will be soon.
