Just a question here, would you think Apex or Respond or even EA would mind me using a Apex logo under my stream name? Because I only play Apex.

Generally speaking it's wise to seek permission when using anything trademarked by the trademark owner, use without permission can leave you liable, however whether respawn would care is another matter entirely.
I can't see it being an issue in this scenario but if you want to play it safe seek permission first. 😛
