There are a lot of settings on by default for steam that impact performance. The biggest one is Steam Overlay, which is a significant resource hog. I'm not sure about how it compares to the EA launcher specifically, but I know that when I booted up through Epic Games that my frames were significantly more consistent.
I've also heard that Steam has less input lag (not sure if that's true), https://9apps.ooo/ so I've stuck with steam and just messed with the settings to improve performance.
