Are there any other emails or accounts you may have used in the past? I see you mentioned this is the correct EA account, but the one you're posting with had never launched Apex on any platform until extremely recently. If you played on Xbox in the past, it was on a different EA account.
As Midnight9746 mentioned, your progress is stored at the EA account level, not on individual platforms like Xbox. This would be why you're not seeing anything - this EA account never had any progress. In this case you'll need to find which other EA account may have been used in the past and link your Xbox there instead.
If you're not sure which account was used or no longer have access to an old one, you can contact support to see if they're able to help verify and update any other potential accounts. That will involve verifying some other info about the account which is why it can't be done here on the forums.

You'll also need to get in touch with support with the link above if you're not sure which account was used. The EA account you're posting with now hasn't been used for Apex previously. If you've played Apex in the past, that would have been on a different EA account as well.
