I was a day 1 player and played almost everyday for 3 years, I haven’t played in 2-3 years and went to get on the game on Sunday and found my account at level 1 with all of my skins, trackers, badges...

Game progress is stored at the EA account level, so seeing as your progress in-game has been reset, it sounds like you might be signed in to the wrong account. You'll need to locate the EA account you previously played through to regain access to your past progress.
Please check your email address(es) for receipts if you've made purchases in the past to confirm the old account's email, and try different credentials or login methods to locate the correct account.
