Took a quick glance at your DxDiag (thanks for including that) and noticed there was a new driver put out recently for your 1080 card. Please update to the latest driver and restart your PC before playing again.

Just a heads up though! The Apex Legends team just tweeted this out for PC players just in case you run into that next:

Really enjoying the game so far but it keeps crashing. I have updated my nvidia drivers and it still crashes.
Game crashes to this error: Engine Error - 0x887A0006 - DXGI_ERROR_DEVICE_HUNG The application's device failed due to badly formed commands sent by the application. This is an design-time issue that should be investigated and fixed.

I'm solve the problem by recoil nvidia gpu driver to 417.71

I was using 417.71 drivers but my game was crashing all the time. Upgraded to new 418.81 and still kept on crashing, everything from DXGI_ERROR to DX12 to memory issues.
I then changed my ingame setting Texture Streaming Budget from Max memory(8GB or more) to very high(6GB) and the crashes stopped.
I have a 1080Ti with system memory 16GB so I should be able to use 8GB
I also changed one or two of the settings as per this screenshot.
